THE DAVENPORT GRAND HOTEL UNVEILS LILAC & PINE, A MODERN PACIFIC NORTHWEST RESTAURANT ROOTED IN THE SPIRIT OF SPOKANE
The Davenport Grand hotel is proud to announce the grand opening of Lilac & Pine, a new Pacific Northwest-inspired restaurant designed as a vibrant gathering place celebrating Spokane’s culture, flavors, and sense of community.
Now open inside The Davenport Grand hotel, Lilac & Pine brings together elevated comfort cuisine, handcrafted cocktails, warm hospitality, and thoughtful design in a space created for connection. Inspired by the landscapes, ingredients, and traditions of the Pacific Northwest, the restaurant offers a modern tavern experience where guests can gather over memorable meals and meaningful moments.
“Lilac & Pine was created to feel distinctly Spokane,” said the VP and Area Managing Director, Melissa Green. “From the menu and design to the custom artwork and local partnerships, every detail was thoughtfully crafted to celebrate the spirit of the Pacific Northwest and the local community.”
The menu at Lilac & Pine, created by Chef Rudy Velasquez, celebrates the Pacific Northwest through elevated comfort cuisine and thoughtfully sourced regional flavors. Guests can enjoy dishes ranging from cedar roasted King Salmon and pine-smoked steaks to Dungeness crab rolls, black garlic & prosciutto flatbreads, kale & goat cheese salads with golden beets and almonds, and richly layered seasonal ingredients inspired by the Northwest.
The culinary program is complemented by a curated cocktail and mocktail menu inspired by the region along with exclusive house spice blends developed in collaboration with Spokane-based Spiceology specifically for Lilac & Pine’s culinary vision. Guests can end the experience with one of the restaurant’s signature sweet finishes, including the Pine & Ember “S’mores” Duo — a playful and elevated dessert crafted by Davenport’s talented pastry team featuring salted vanilla and peanut brittle ice cream, torched marshmallow, cocoa nib tuile, warm chocolate sauce, and a bed of Davenport’s signature Peanut Brittle crumble.
The restaurant’s design reflects a warm and modern Northwest aesthetic, layering natural textures, rich finishes, and inviting spaces intended to encourage gathering and conversation.
At the heart of the restaurant hangs a custom commissioned art installation created exclusively for Lilac & Pine by Spokane artists Ben Joyce and Jesse Pierpoint. Inspired by the energy, traditions, and landmarks that shape downtown Spokane, the large-scale piece weaves together familiar moments — from Hoopfest and Bloomsday to the Looff Carrousel and hometown pride, into one collaborative work of art.
Designed to complement the restaurant’s elevated Pacific Northwest aesthetic, the installation reflects Lilac & Pine’s connection to place, community, and the stories that make Spokane unforgettable. When approached by the Davenport Hotels to submit concepts for the project, Joyce and Pierpoint immediately recognized the opportunity as the perfect moment to collaborate together for the first time.
“We wanted to create something that connected guests to Spokane through imagery and experiences they may recognize and feel emotionally tied to,” the artists shared. Constructed with wood, acrylic paint, varnish, and resin, the piece took approximately two to three months to conceptualize and complete. It was installed in May 2026.
Lilac & Pine continues the Davenport Hotels’ legacy of creating hospitality experiences deeply connected to Spokane while introducing a fresh new culinary destination for both locals and visitors alike.
